Why sharpen your knives?

Sharpening knives is sometimes perceived as somewhat of a lost profession. In this modern time of “disposable everything”, made with cheap materials, it is quite common that some folk will throw away a knife when it is blunt and simply buy another cheap knife. You may even know people who do this! Traditionally, sharpening was a necessary and ritualistic activity - an integral part of preparing for some event like sharing conversation and a meal with friends. Making the sharpening task more difficult is the quality of the steel and the knife designs used today. Knives of hard steel with unique shapes and serrated edges sometimes offer insurmountable challenges to people trying to maintain their blades.

On a different front, we turn to the kitchen. It is here that cooks and chefs of all skill levels all over the world prepare for the feast. The daily ritual of preparing creative, tasty and nourishing meals by sharpening their knives.

Sharpening is an ancient Zen task that requires mental and physical discipline. The reward for successfully completing this task is complete confidence that your knives are up to the task of slicing, dicing and chopping all manner of ingredients for the meal, and great satisfaction that your knives make short and pleasing work of it all.

Having sharp knives puts the fun and excitement into cooking for any chef - amateur or professional.

The problem for most people lies in the fact that sharpening is time consuming and requires specialized tools as well as knowledge and skill.
